Our parents and teachers told us that we should eat vegetables because those are very nutritious and healthy. Still diabetic patients should be cautious when eating vegetables. Some vegetables are considered included in the high glycemic index and also vegetables that have been cooked along with some condiments or foods that have high fats which can trigger the blood sugar to rise. This is a very helpful tool especially to diabetic patients, for them to know which vegetables to eat and to avoid, to be able to effectively manage and control the level of their blood sugar.

There are three different categories of glycemic index vegetables those are: low, medium and high. These categories are determined through the carbohydrate content in every 50mg serving. Apart from green leafy vegetables' vitamins and minerals, most of them also classified as the low glycemic index vegetables that will be able to help diabetic patients to maintain their blood sugar at a normal range. So, if you want to have a sexy body and to achieve an optimum health you should include these in your diet.

Some lists of foods that were classified as low glycemic index were legumes, beans, soya, pinto beans, peas, kidney and butter beans. This was just to let you know some options that you can eat in case you want something else in your diet.

Fresh corns, beets and potatoes were considered as medium glycemic vegetables but they could also be classified under the high GI vegetables if they will be combined with other condiments of ingredients. But diabetic patients or people could eat these foods in only minimal servings, a small slice of potatoes for example. Anyways, mashed potato should be avoided because it contains butter which was classified in high GI because it's rich in fats.

Although parsnips and carrots come from the same family of root crops they have very different GI values. Parsnips are considered to be high glycemic index vegetables. Pumpkins also have very high GI value. But eating a very small amount of these sometimes won't hurt.
