The result has proved that the content of the carcinogenic substance called "acrylamide" in fried chips is relatively high. In fact, many people have already known that the intake of fried chips can seriously threaten the physical health of the human body. But they can not stop eating the food. Some people concern that whether the famous brands of chips also contain the high content of acrylamide or not. According to the medical research, the acrylamide can probably cause cancer inside the human body. The International Agent for Research on Cancer has divided the carcinogenic substances into five grades on the basis of the criticality. Grade one includes the most dangerous substances, such as coal tar and cadmium. The acrylamide belongs to the grade two. Its harm is nearly equal to the harm caused by the automobile exhaust. In 2005, the Ministry of Health in China has warned that the acrylamide can be easily caused during the production process of starch foods in the more than 120 degrees centigrade, which can seriously endanger the human health. Therefore, people should avoid cooking the starch foods in the high temperature and change the dietary habit of taking the fried foods containing high fat so as to decrease the intake of acrylamide. Although there is no proof to prove the relationship between the intake of fried chips and the formation of cancer, the risks of getting cancer can be seriously increased by the excessive intake of fried foods. The toxins produced by the acrylamide can be accumulated inside the human body and cause various diseases. The patients with high blood pressure and diabetes should strictly avoid the fried foods. According to the research in Stockholm University, 1000 grams of fried chips contain 400 milligrams of acrylamide. The modern research has found out that the frequent touch of acrylamide can cause various symptoms for people, such as drowsiness and megrim. In order to maintain the physical health, people should refuse the fried foods containing acrylamide as far as possible in everyday life.
