Following are a few low carb recipes to tempt your tastebuds: Lamb Racks with Macadamia & Apple Crust Serves:4 Ingredients: 150g Macadamia nuts 1 Apple, grated 2 tbsp of fresh rosemary 2 tbsp of fresh parsley 1 lemon, grated rind and juiced Salt and pepper to taste 1 kg of lamb racks divided into 4 Olive oil spray 100g of mixed salad greens 1 Lebanese cucumber sliced 6 cherry tomatoes halved 250g of fetta cheese, crumbled Method: Chop the nuts into tiny pieces and combine with the apple, rosemary, parsley, lemon rind and season with salt and pepper.
Preheat the oven to 200 degrees C.
In a roasting pan, place the lamb racks on the tray that sits above the pan and place water below so that it is not touching the lamb.
Rub the macadamia mixture over the lamb racks and spray with olive oil.
Roast in the oven for 35 to 45 minutes or until cooked to your liking, take out, cover with foil and allow to rest.
Make the salad while the lamb is resting.
Combine the mixed greens, cucumber, tomato and feta in a large salad bowl and drizzle with lemon juice, season with salt and pepper and serve.
Blackberry Cheesecake Serves:6 Preparation Time:15 minutes Ingredients: 100g of shredded wheatmeal biscuits 1/3 cup of desiccated coconut 80g melted butter 375g of light cream cheese 1/3 cup of caster sugar ½ cup of light cream 2 tbsp of boiling water 2 tbsp of gelatin 350g of blackberries Method: Process the biscuits, coconut and melted butter in a food processor until crumbs are formed.
Get a 20cm spring form cake tin and press in the biscuit mixture.
Place into refrigerator while completing the remainder of the dish.
Beat the cream cheese, cream, and sugar in an electric mixer until smooth and sugar has dissolved.
Combine and whisk the gelatin with the boiling water until the gelatin has dissolved.
Add the gelatin to the cream cheese mixture and beat to combine.
Fold in half the blackberries into the cream cheese mixture and place onto the base.
Top with the remaining blackberries.
Cover and refrigerate for at least four hours or until set.
