I suppose there are some kids somewhere who don't like pizza, but I have yet to meet one. These stuffed potatoes combine the flavors of great pizza in an easy-to-make stuffed potato recipe. You can use any kind of cheese in this recipe. I like to use a combination of cheeses or an Italian blend for extra flavor and variety, but feel free to use just shredded mozzarella if that's what you have on hand.
