  • 1). Boil the cider over high heat in a small saucepan until reduced by half, about 7 minutes. Set aside.

  • 2). Bring a pot of salted water to a boil over high heat.

    Put the yams in the boiling water and cook 30 to 40 minutes, until tender. Drain well in a colander.

    Peel the yams when they are cool enough to touch (but not cold) and return them to the pot in which they were cooked.

    Add the cider, butter, brown sugar and salt.

    Mash the yam mixture with a potato masher or ricer until well blended. Serve warm.
