How to Make Mashed Yams With Cider
- 1). Boil the cider over high heat in a small saucepan until reduced by half, about 7 minutes. Set aside.
- 2). Bring a pot of salted water to a boil over high heat.

Put the yams in the boiling water and cook 30 to 40 minutes, until tender. Drain well in a colander. - 4
Peel the yams when they are cool enough to touch (but not cold) and return them to the pot in which they were cooked. - 5
Add the cider, butter, brown sugar and salt. - 6
Mash the yam mixture with a potato masher or ricer until well blended. Serve warm.
