How to Make Broccoli Cheese Soup
- 1). Add broccoli to about 1 inch of water in a medium saucepan. Bring to a boil, then lower heat and simmer covered for 7 to 9 minutes. Drain in a colander, chop into bite-sized pieces and set aside.
- 2). Place chicken broth, 1 cup water, and the processed American cheese in a large microwave safe bowl. Cook on medium setting until the cheese has melted. Stir at regular intervals to mix thoroughly.
- 3). Fry bacon in a heavy pot until crisp. Remove bacon and drain off grease, reserving 1 tbsp.
- 4). Brown onion and red bell pepper in reserved bacon grease.
- 5). Remove pot from burner and add the cheese mixture to the onions and peppers. Next add the broccoli and half & half. Mix well.
- 6). Return pan to burner over medium heat. Using a fork, mix the cornstarch with 1 cup of cold water and pour slowly into the pot, stirring constantly.
- 7). Heat soup until thickened, again stirring constantly. Season to taste with salt and pepper.
