Crunchy Memphis Fried Fish Sandwich Recipe -- How to Make Memphis Rub Fried Fish
These fried fish sandwiches are very easy to make and are extra delicious and zesty. The batter is made with white cornmeal for flavor and crunch, and uses amber beer for body and lightness. The zest comes from Memphis barbecue rub, a powdered seasoning most often used for smoked pork ribs and beef brisket.
Among its ingredients, Memphis barbecue rub contains garlic, onion, chili powder, cumin, paprika, and cayenne -- all of which are very 'fish-friendly' seasonings. It can be bought commercially, or you can make your own spice mixture with this easy recipe.
This recipe was originally made with tilapia, but would work very well with whiting, catfish, hake, cod, swai, or any firm white fish fillets.
