How to cook a sweet potato

Most people consider sweet potato to be a very boring vegetable which is usually only cooked on religious fasts and even then it is only baked or boiled before it is peeled and eaten. This recipe is a classic example of how delicious and versatile the humble sweet potato can be. Most people are under the common misconception that the sweet potato is a fairly tasteless and boring vegetable however with a variety of exciting preparations to choose from this fairly simple vegetable can turn into a lip-smacking dish.

Preparation Time: 10 minutes.

Cooking Time: 20 minutes.

Serves 4 people.

Ingredients:

2 large potatoes
2 medium sized sweet potatoes (shakarkand)
4 tbsp Green Chutney
1/2 cup Khajur Imli ki Chutney
1 cup curds (dahi), beaten
1/4 tsp black salt (sanchal)
1/2 tsp roasted cumin seeds (jeera) powder
1/4 tsp chilli powder
1/2 cup grated white radish (mooli)
4 tbsp oil
salt to taste

Method:

Step 1) Boil the potatoes and sweet potatoes in salted water. Then peel and cut into large cubes.

Step 2) Heat the oil in a non-stick pan and sauté the potato and sweet potato cubes until they turn golden brown.

Step 3) Drain these cubes on absorbent paper and then place in a serving dish.

Step 4) Top the cubes with green chutney, khajur imli ki chutney, curds, black salt, cumin seed powder, chili powder and salt.

Step 5) Garnish with grated radish and serve hot.

Cover and refrigerate for up to two days if making in advance. Reheat on the stove top or in the microwave.
