Irrisistible Southern Comfort Food: Pimento Cheese

I'm not Southern and in fact had never even tasted pimento cheese before, so I had no emotional connection to the traditional recipe and felt at liberty to make some changes. I used half cream cheese and half mayo, instead of all mayonnaise, and added some capers for a little zip.

But I didn't stray too far from tradition. Pimento cheese is not the type of thing that should be overly fancy or gourmet. It is what it is: a simple and tasty cheese spread that makes for great snacking.
