    • 1). You can use just about any kind of fish but my personal favorite is Tilapia since it tastes great, but it is also readily available at most supermarkets. As an added bonus, it is one of the cheapest fishes to buy as well. But don't let the cheap price fool you...it's delicious.

    • 2). Using your favorite spices, prepare some seasoned flour. Lightly coat the tilapia fillets with the flour.

    • 3). Then dip the floured fillets in an egg wash.

    • 4). Place the fillets in a large pan containing a generous amount of heated oil. The oil should be hot enough to crackle when water drops are placed on the pan. I like to use vegetable oil, but most other oils will work.

    • 5). Keep an eye on your tilapia fillets as they will cook very quickly. Turn them over a couple of times to make sure they are cooked all the way through.

    • 6). After they finish cooking place them on plates with paper towels to absorb the excess oil. Sprinkle some salt over them while their hot. My personal favorite is garlic salt, but you can use any other seasoning as well. Keep in mind that you've already used seasoned flour, so, use any further salt in moderation.

    • 7). Although the traditional way is to serve the fish with tartar sauce, I prefer a more refreshing compliment. I serve fresh salsa containing chunks of tomatoes, onions, and cilantro leaves. You can find my recipe in the Resources section below. The fresh salsa will help to offset the greasiness of the fish.
