Ingredients
- 2 cans black beans, drain
- 2 cans black-eyed peas, drain
- 1 can corn, drain
- 1 large diced sweet onion
- 1 diced Bell pepper, chopped
- 4 minced garlic cloves
- 2/3 cup apple cider vinegar
- 1/2 cup olive oil
- 1 teaspoon crushed red pepper flakes
- 2 teaspoons sugar
- 1 teaspoon salt
- 1/4 cup fresh minced cilantro
- Prep Time: 10 minutes
- Total Time: 10 minutes
Preparation
Place beans, black-eyed peas, Bell pepper and garlic in a medium size bowl. To make the dressing, place vinegar, olive oil, red pepper flakes, sugar and salt in a bowl and whisk to blend. Pour the dressing over the beans, peas and vegetables. Add the minced cilantro and gently stir to mix. Refrigerate until ready to serve.Serves 8
