Quinoa
Definition:
Quinoa is all over the place nowadays, where at one time it was barely known by anyone in the mainstream cooking crowd. Quinoa, however, is an ancient food, known to have been cultivated centuries ago in the Andes mountains. And while you may consider quinoa to be a sort or grain, it is actually a seed, and not a grain. However, most cooks use it in place of grains, and the texture, and appeal of quinoa is much like that of a grain.
Quinoa has gained popularity among the health conscious crowd as it really is quite a nutrient packed food. Compared to other grains, it provides a significant source of calcium, and also has a high protein content providing all nine essential amino acids. Therefore, quinoa is considered a source of complete protein for those aiming for a diet high in protein without consuming a lot of animal products.
Quinoa is simple to prepare. After giving it a vigorous rinse in a mesh strainer (to prevent bitterness), place it in a saucepan with a 1:2 ratio with water (one part quinoa to 2 parts water). Bring the mixture to a boil, then reduce the heat and simmer for about 15 minutes until the water is absorbed. For added flavor, substitute chicken or vegetable broth for water, or add a pinch of salt to the quinoa during cooking.
