Place the saucepan on the stove with the burner set to a medium-low heat. Heat without stirring until the candy thermometer reaches 310 degrees Fahrenheit, which is the hard-crack candy stage. - 3

Remove the saucepan from the stove, and allow it to sit for a couple minutes until there are no more bubbles in the liquid. Add the flavoring of your choice--such as coconut, root beer, peppermint or cherry. Stir the flavoring into the rest of the ingredients. - 4). Spray the lollipop molds with baking spray to make the lollipops easier to remove once hardened. Pour the liquid into each mold and then set the filled molds on a marble cutting board or slab. Lay a stick in the lollipop mold so about 1/2 inch of the stick is in the lollipop.
- 5). Allow the lollipops to set and harden for one hour. Remove the lollipops from the molds without breaking by flexing the molds the same way an ice cube tray is flexed to release ice cubes.
- 6). Place a plastic sandwich bag over each lollipop. Tie a piece of ribbon around the lollipop stick, at the base of the lollipop. Store in a cool place.
