Directions for Boiling a Lobster
- 1). Choose a pot that all of the lobsters can fit in easily without crowding them. Six to eight lbs. of lobster will generally fit in a four to five-gallon pot.
- 2). Fill the pot with water. Use about 3 qts. of water per 1-1/2 to 2 lbs. of lobster. The Maine Lobster Council recommends preparing lobster using sea water to retain the briny ocean flavor. However, if sea water is unavailable, well-salted water will suffice. Add 1/4 cup of sea salt per gallon of water.
- 3). Bring water to a rolling boil.
- 4). Put in the live lobsters, one at a time, and begin timing. Set the timer for eight minutes for a 1 lb. lobster and add one to two minutes for each additional 1/4 lb.
- 5). Cook uncovered.
- 6). Stir the lobsters approximately halfway through the cooking time.
- 7). Remove the lobsters when the appropriate amount of time has lapsed. Allow them to rest for at least five minutes after cooking to retain moisture.
