How to Turn Your Barbecue Grill Into a Smoker
- 1). Lift the cooking grate out of the grill to expose the charcoal grate.
- 2). Pour charcoal onto only side of the charcoal grate.
- 3). Light the charcoal with a match and wait until the coals are covered with gray ash, which typically takes between 30 and 45 minutes.
- 4). Immerse approximately three handfuls of wood chips in water and allow them to soak while waiting for the charcoal.
- 5). Place an aluminum cooking pan next to the charcoal on the cooking grate.
- 6). Fill the aluminum pan with water, taking care not to inadvertently splash water onto the charcoal.
- 7). Lower the cooking grate into the barbecue grill.
- 8). Position the food item over the water pan.
- 9). Sprinkle one handful of soaked wood chips onto the charcoal through the cooking grill and place the lid onto the grill.

Add soaked wood chips to the charcoal throughout the cooking process. The amount of chips to add depends on the cooking time and personal taste. While some prefer a heavy smoke flavor, others prefer only a mild smoke flavor.
