Video: Brie-Stuffed Dates Wrapped in Bacon

Hi, I am celebrity Chef Mariko Amekodommo, and today I am going to show you how to make brie stuffed dates wrapped in bacon. This is one of my personal favorite appetizers to make and whenever I make it for guests they go crazy! So pay attention because this is the appetizer the people will be talking about. First you want to get dates, there are so many different types of dates out there, I like getting the ones that are extra large because they are sweeter and plumper inside. So you'll want to check them for seeds, just make a little slit, be careful not to cut yourself, open it up and there you have the seed so you will want to get that out, then do this for a whole bunch of dates and then you want to get your brie, I'm going to cut it in a like a little rectangle like cube size shape about the size of the pit that was in there, then I'm just going to stuff it inside the date, just stuff it in there and the brie is soft so it's going to go in there easily, okay now I am going to close it up and now I'm going to get a piece of bacon. Today, I am using some organic all natural hardwood cooked bacon, you could also use some prosciutto or panchetta if you want to make it a little extra fancy. Now I am just going to wrap it around the date making sure to seal up the opening, I'm going to get the bacon all around there and then I'm going to seal it with a toothpick. Now it is ready to put in a nonstick pan, I'm just going to give it a little spray of olive oil and if you don't want to do it in the pan you could also bake it in the oven, it's going to be about 5 to 10 minutes at 350 degrees and you'll want to flip them halfway, but today I am just going to do them in the pan. You'll want to cook them until they are nice and brown on each side so you're going to want to use some tongs and flip them about every minute and a half, once the bacon is cooked on all sides your dates are ready to serve. I absolutely love this appetizer because you get the good flavor of the brie and the smokey bacon and the sweet juicy dates.
