You Call That Cajun Food? Now This is Cajun Cooking!

Being born and growing up in Louisiana, Cajun food is something that I love and have developed a passion for.
The problem is that a lot of people don't really know what Cajun cooking is.
Well, I am here to change that, even if I have to do it one person at a time! My first experience outside of LA was an enlightening one in regards to Cajun food.
I was out of town visiting a couple of friends and in my honor the decision was made to head to a Cajun restaurant.
Now I won't even mention the restaurant because they don't deserve to have their name mentioned on the same page as anything that has anything to do with Cajun cooking.
If you want true Cajun food, you better get out a big ole' pot and get ready to get your hands dirty.
Many of our dishes are cooked in one big pot to blend all of those wonderful flavors that Cajun food is known for.
While there are also plenty of dishes that can stand alone, nothing beats a traditional dish like gumbo to get your mouth watering.
One of the staples of Cajun cooking is boudin.
This is a Cajun sausage that is stuffed with pork, rice and Cajun spices that is truly spectacular.
While it can be prepared in a variety of ways, I prefer to grill it off and then throw it on a fresh roll with some spicy mustard.
That and a cold beer will get you through any day.
Of course, gumbo is the one dish that has probably made Cajun food as popular as it is today.
This is a great example of what Cajun food is all about.
Loaded with Andoullie sausage, this spicy dish will definitely get your attention.
If you really want to set it apart, dust the top of the dish with some "Slap Ya Mama" before you serve it.
The first spoonful will be something that they will not soon forget.
There are a lot of fancy chefs out there selling the concept of Cajun food to the masses, but when you want real Cajun food, there is only one place to go, Louisiana.
Cajun cooking is something that comes from the soul, not out of someone's "new idea" for a hip fusion restaurant.
