    • 1). Peel the shell from the shrimp. You may leave the tail on or remove it, if you wish.

    • 2). Make a small cut down the outer curve of the shrimp. Remove the vein, using a knife of fork, if needed, and rinse the shrimp.

    • 3). Make a deep cut down the outer curve of the shrimp, starting at the tail, and spread the meat apart as you go. Do not cut straight through. You must leave some meat intact at the bottom to hold the shrimp together.

    • 4). Cook the shrimp as you wish and serve.
