Video: How to Cook Homemade Grits

Hi, I'm Angie from Angie's Southern Kitchen, and today we're going to learn how to make homemade grits and these are fast cooking grits and they claim that they cook in five minutes but I've never been able to cook them in five minutes but they are much quicker. And this is the long cooking grits, these take about 25 to almost an hour sometimes but today we're actually going to use the quick cooking grits because we're going to put them in another dish and they work basically the same way. You just have to cook these a little bit longer and add a little bit more liquid than you do with the quick grits and today we have one and a half cups of grits and we have three cups of water and one cup of milk. And milk is just something that I add to make it a little bit richer. Sometimes if it's a savory dish and it's not for breakfast I'll put chicken stock or veal stock or beef stock and kind of jazz up the grits a little bit. I'm putting a quarter cup of butter in here and a teaspoon of salt and you're going to get your liquids going to a low simmer and then you add your grits in while stirring because if you don't, they will clump up in little clumps and once they get in those little clumps you just about can't get them to break back up. So we're going to get all this going and get it simmering and then we're going to add our grits. Our grits are ready now and you can see that they are thick and creamy and I like to serve my grits with accompaniments on there. I like to put either cheddar cheese or some chopped crispy bacon or some green onions, makes it taste wonderful.
