How to Blanch Peppers

    • 1). Put water in the pan, turn the stove on and bring the water to a boil.

    • 2). Rinse the peppers well. Remove the top of the pepper and take out the seeds and ribs. You can blanch peppers whole or in pieces, depending on how you want to use them. Cooks leave peppers whole to stuff them and cut them into pieces for freezer storage or for use in recipes.

    • 3). Place the peppers in the boiling water. If the whole peppers float, push them down with the tongs or spoon to fill the center with water, helping the pepper sink to the bottom. Boil whole peppers for five minutes, halved peppers for three minutes and pieces for two minutes.

    • 4). Lift the peppers from the boiling water with a spoon or tongs and place in the bowl of ice water.

    • 5). Drain the water and ice in the bowl once the peppers have stopped cooking and use according to the recipe or place in freezer bags for storage.
