How to Operate a Weston Manual #32 Meat Grinder

    Preparation

    • 1). Wash the grinder's parts thoroughly to remove any grease left behind from the manufacturing process. Wash the parts with warm, soapy water, rinse off all soap residue then dry them with a lint-free microfiber cloth.

    • 2). Secure the grinder body onto a flat surface using the predrilled holes in the grinder. Choose counter space that will allow free movement of the grinder's handle.

    • 3). Assemble the grinder for ground meat. Slide the auger into the grinder body. Place a cutting knife on the square end of the auger pin with the cutting edges facing out. Attach a grinding plate onto the round part of the auger pin, aligning the groove on the plate with the locking pin inside the body. Screw the ring nut onto the front. Slide the handle onto the end of the auger and lock it down with the thumbscrew.

    • 4). Prep the grinder to make sausage. Slide the auger into the grinder body and attach the stuffing star onto the round end of the auger pin. Push a funnel through the hole in the middle of the ring nut so that the narrow end of the funnel points out then screw the ring nut onto the front. Slide the handle onto the auger at the back and lock it down with the thumbscrew.

    Meat Grinding

    • 1). Place a container under the front of the grinder to catch the ground meat.

    • 2). Prep your chilled (32 to 34 degrees Fahrenheit) meat. Cut and throw away any bones, clots, cords or tendons, then cut the remaining meat into cubes.

    • 3). Feed the meat cubes slowly into the top of the feeder and begin cranking the handle clockwise to grind the meat.

    Sausage Stuffing

    • 1). Soak your casings in warm water for approximately a half hour. Slide the first casing slowly over the funnel end---as much of the casing as possible. If done correctly, the bulk of the casing should appear bunched together over the end.

    • 2). Tie a knot off at the other end of the casing so that the meat doesn't slide out when you fill it.

    • 3). Pack ground sausage into the feeder. Hold the casing onto the funnel then begin cranking the handle clockwise to fill. Continue this process until you have filled the casing then pull the remaining casing from the funnel and tie it off.
