How to Prepare Suckers
- 1). Prepare the area on which you're going to pour the sucker mixture. Whether you're going to use a mold, marble slab, or cookie sheet, spray it with oil.
- 2). Mix the sugar, cream of tartar, corn syrup and water together in a small pot. Pour in each ingredient slowly while stirring it with a wooden spoon.
- 3). Turn on the stove to medium heat. Place the pot on the stove and continue stirring. Do this until the sugar dissolves and the mixture starts to boil. When the mixture starts to stick to the edges of the pot, apply small quantities of water with a pastry brush.
- 4). Place the candy thermometer in the mixture and remove the wooden spoon. Let it cook until the reading on the thermometer is 300 degrees F.
- 5). Remove the pot from the stove. Let it cool until the reading on the thermometer is 275 degrees F. Mix the flavoring, artificial coloring and citric acid into the mixture.
- 6). Pour the candy mixture into the molds, or onto the slab or sheet very quickly. Place the sticks into the dollops of candy and twirl them around so they are completely covered in candy.
- 7). Let the lollipops cool for at least 10 minutes. Pull them off the marble and wrap them in plastic or cellophane. Secure with a ribbon.
